This vegan, gluten free, grain free, oil free and refined sugar free almond butter dressing has been a go to fave for years. It works with most protein sources and veggies so get experimenting!

ALMOND BUTTER NOODLES
Servings: 1
Ingredients
Almond sauce
- 1.5 tbsp almond butter
- 3 tbsp tamari soy
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1/2 tsp garlic minced
- 1/2 tsp ginger minced
- 4 spring onions finely sliced
The rest
- 1 handful long stem broccoli
- 1 handful mangetout
- 1 big handful baby spinach
- 1 portion of buckwheat noodles I used King soba brand
- Sesame seeds
Instructions
- Whisk together all dressing ingredients.
- In a wok or large frying pan, bung in broccoli + mangetout + 1/2 cup water. Cook till al dente and water has evaporated.
- Meanwhile boil noodles to packet instructions.
- Add spinach + sauce to wok. Bring to a simmer, add noodles. Stir till combined.
- Pile into a bowl, sprinkle on sesame seed and dig in! Best eaten straight away.
