Roasties were the last thing I ate 6 years ago. A good choice eh, everyone loves a good roast potato!

I ate some for a small bowel manometry test (a thick orange tube goes through the nose and into the small bowel to check muscle function) The results finally explained all the problems I was having.. I had gastroparesis- a partially paralysed stomach.

Having my first roast potato in over 7 years was heavennnn, and the after effects were pretty hellish. However I don’t regret it, I knew this was the last time I would eat something normal so we made the most of it! My mum, sister and I cooked up the perfect roasties and sat down and ate together. I hadn’t eaten the same as them or held a knife and fork in years so it was a special moment for us!

Food brings people together, sparks memories and we live in a food-centric society..so much is evolved around and associated with it these days! Things like licking ice cream on a beach, slurping hot chocolate on a cold winters day, blowing out birthday candles, eating my body weight in chocolate at easter and having a bevvy up the pub with friends are some of the simple pleasures I miss, the biggest one being Christmas. Sitting around the table with fam and friends whilst tucking into the best roast of the year is something special. Appreciate the little things guys, and make sure to make these ultimate roasties!
