A brilliant quick n easy dish to knock up that doesn’t lack in the flavour department!
Feel free to bung in veg to get those 5 a day in! Red pepper, courgettes and spinach would work well.

RED PESTO GNOCCHI
Servings: 2 to 3
Ingredients
- 500 g gluten free gnocchi
- 1 jar vegan tomato pesto
- 1 tin chopped tomatoes
- 4 tbsp vegan cream cheese I used Nush foods
- 4 spring onions sliced
- 1 large garlic clove minced
- 1/2 tsp coconut oil
- Big handful vegan Mozzarella cheese I used sheese
Instructions
- In a large pan, saute spring onions + garlic for 2 mins in the oil.
- Bung in chopped tomatoes + red pesto + cream cheese + salt + pepper. Simmer for 5 or so mins.
- In the meantime, boil gnocchi to packet instructions. Drain.
- Add gnocchi to sauce, mix to coat.
- Spoon gnocchi into an overnproof dish. Sprinkle mozzarella on top.
- Grill for a few mins till melty gooood
