Its super creamy thanks to the cashews and adding miso gives it a nice savoury umami kick.

5 MIN VEGAN QUESO
Servings: 2
Ingredients
- 1/4 Paste chipotle paste, I used Gran Luchito chipotle paste from waitrose
- 1/8 tsp Cumin
- 1/8 tsp Smoked paprika
- ¼ tsp Garlic, minced
- 1.5 tsp Lemon juice
- 1.5 tsp White miso
- 1/2 cup Water (If you can’t wait 24 hrs to try this out, use boiling water in replace of the cold water)
- 1/2 cup Cashews soaked in plenty of water overnight
Instructions
- Bung all ingredients into a small blender, starting with the lesser amount of water.
- Blitz till smooth and creamy, adding more water if needed. The queso should be a pourable consistency.
- Taste and adjust spice levels and seasoning if needed. It's totes on personal preference!
- Feel free to add nutritional yeast to add a more cheesey flavour.
