LOADED NANDOS PERI PERI SMASHED POTATOES
Ingredients
Potatoes
- 1 kg new potatoes
- 1 tbsp Nandos UK peri peri salt
- 1.5 tbsp oil of choice
Toppings
- 2 soft avocados smashed
- 1 tbsp lime juice
- 3 medium tomatoes- deseeded and diced
- 4 spring onions sliced
- Coconut yog
- Chilli flakes
- Fresh chillies optional
- Fresh coriander chopped
Instructions
- Preheat oven to 200c
- Bung potatoes onto a large baking tray, pour on the oil and rub to coat.
- Whack in the oven for 30 mins, turning halfway through.
- Sprinkle on the salt and shake till potatoes are fully coated. Gently squash each with a potato masher or fork. Sprinkle a lil more peri salt on top and pop back in the oven 10-15 mins.
- While potatoes are cooking, prep the tomatoes + spring onion + mix avocado with lime juice.
- Once potatoes are cooked, pile on a plate and top with all the toppings. DEVOUR.
