When I used to live at home, my mum had this for lunch A LOT. My go to for making a healthy, quick, easy and adaptable lunch
I did this one with mozzarella and sweet chilli dressing, but the options are endless! Here are a few variations you could try:
Beans – for vegans | Mozzarella, feta, halloumi- for the cheese lovers | Or leave it just as it is!
Pesto, balsamic or avocado dressings work great with this too 👌
TIP If you don’t have a spiralizer- use the edge of a grater- It will look a bit like tagliatelle.
SPIRAL SUMMER SALAD
Servings: 2
Ingredients
Salad bits
- 1 Large courgette, spiralised
- 2 Medium carrots, spiralised
- 4 Spring onions, finely sliced
- Handful of cherry tomatoes, sliced
- 1 Avocado diced
- Half a red pepper, diced
- Toasted sunflower and pumpkin seeds
Sweet chilli dressing
- 4 tbsp Sweet chilli jam, i used cherrytree preserves
- 4 tbsp Extra virgin olive oil
- 2 tbsp + 1 tsp raw apple cider vinegar, i used rude health
- 2 tsp Maple syrup
- Himalayan salt and black pepper to taste
Instructions
- First whip up the dressing. Whisk all ingredients together till combined.
- Salad time. Mix all ingredients in a large bowl
- Pour on the dressing and toss to coat.
- Sprinkle on a few extra seeds and dig in!
- This salad is best dressed when your just about to eat it.
