1kgnew potatoes
1tbspNandos UK peri peri salt
1.5tbspoil of choice
Toppings
2soft avocadossmashed
1tbsplime juice
3medium tomatoes- deseeded and diced
4spring onionssliced
Coconut yog
Chilli flakes
Fresh chilliesoptional
Fresh corianderchopped
Instructions
Preheat oven to 200c
Bung potatoes onto a large baking tray, pour on the oil and rub to coat.
Whack in the oven for 30 mins, turning halfway through.
Sprinkle on the salt and shake till potatoes are fully coated. Gently squash each with a potato masher or fork. Sprinkle a lil more peri salt on top and pop back in the oven 10-15 mins.
While potatoes are cooking, prep the tomatoes + spring onion + mix avocado with lime juice.
Once potatoes are cooked, pile on a plate and top with all the toppings. DEVOUR.
