SPIRAL SUMMER SALAD

Ingredients

Salad bits

  • 1 Large courgette, spiralised
  • 2 Medium carrots, spiralised
  • 4 Spring onions, finely sliced
  • Handful of cherry tomatoes, sliced
  • 1 Avocado diced
  • Half a red pepper, diced
  • Toasted sunflower and pumpkin seeds

Sweet chilli dressing

  • 4 tbsp Sweet chilli jam, i used cherrytree preserves
  • 4 tbsp Extra virgin olive oil
  • 2 tbsp + 1 tsp raw apple cider vinegar, i used rude health
  • 2 tsp Maple syrup
  • Himalayan salt and black pepper to taste

Instructions

  • First whip up the dressing. Whisk all ingredients together till combined.
  • Salad time. Mix all ingredients in a large bowl
  • Pour on the dressing and toss to coat.
  • Sprinkle on a few extra seeds and dig in!
  • This salad is best dressed when your just about to eat it.
