Ingredients
Salad bits

Large courgette, spiralised

Medium carrots, spiralised

Spring onions, finely sliced
Handful of cherry tomatoes, sliced

Avocado diced
Half a red pepper, diced
Toasted sunflower and pumpkin seeds
Sweet chilli dressing

Sweet chilli jam, i used cherrytree preserves

Extra virgin olive oil

+ 1 tsp raw apple cider vinegar, i used rude health

tsp
Maple syrup
Himalayan salt and black pepper to taste
Instructions
First whip up the dressing. Whisk all ingredients together till combined.
Salad time. Mix all ingredients in a large bowl
Pour on the dressing and toss to coat.
Sprinkle on a few extra seeds and dig in!
This salad is best dressed when your just about to eat it.
